Welcome to The Salt Slab BBQ – an authentic Central Texas BBQ destination in the heart of the KwaZulu-Natal Midlands Meander.

We bring real Texas BBQ to South Africa: meat slow-smoked over wood, seasoned with a simple yet power blend of salt, pepper, and select spices – served with true BBQ soul. Our craft is built on patience, precision, and respect for tradition.

From perfectly smoked brisket and tender ribs to handcrafted sausages and carefully paired sides, every dish is designed to deliver bold, unforgettable flavour. This isn’t fast food – it’s low-and-slow, fire-driven cooking, done right.

At the heart of it all is head pitmaster Mike Ross, a man who truly knows how to raise the steaks. With nearly two decades of passion for BBQ, he leads a team of talented pitmasters, working the fires from dawn to late night – his passion evident in every bite. Supporting him is Max from Texicana BBQ, a seasoned consultant who has worked with renowned names like InterStellar BBQ and Terry Black’s. Together, they’ve brought authenticity, expertise, and a shared commitment to doing things properly.

What Makes Us Different

At The Salt Slab BBQ, authenticity isn’t a trend it’s who we are.

Our pitmaster, Mike, holds dual citizenship and has been immersed in real Central Texas BBQ culture since 2006. This isn’t something we’ve copied… it’s something we’ve lived. From the way we season our meat ( salt & pepper & other spices) to our low-and-slow wood-fired smoking methods everything we do stays true to authentic Central Texas BBQ traditions.

We’re proud to say: This is not “inspired by” BBQ. This is the real deal. In fact, we are the only truly authentic Central Texas-style BBQ experience in South Africa.
